I am always on the lookout for new recipes so I thought why not crowdsource here at TLP? My current favorite recipes are from food bloggers Skinnytaste and Emily Bites. I will link up some favorites in the comments. Please link up yours, too!
I'll start with this one from Emily Bites - Beefy American Goulash. I have made this so many times. My family loves it. The recipe makes a very large quantity so I cut it in half. If you are on the current Dec 2022 Weight Watchers and use wheat noodles this is 8 points. Beefy American Goulash - Emily Bites
Yay! I love - love - LOVE - cooking and eating food. I will sure help filling this thread. (Though I'm currently hating WeightWatchers for changing the program AGAIN - I'm done with them - but that's another story ... LOL) Here's a great recipe: https://www.pickuplimes.com/recipe/spicy-garlic-tofu-3 I love her web site & YouTube channel - lots of yummy food. (If I remember correctly this lands on 4 points per serving, then add points for rice. If you make the tofu in the airfryer, no oil is needed for frying it.)
This! As a side dish to everything. I love it! (Not sure about points, seems I haven't added it to the app. Guessing 3-4?) https://rainbowplantlife.com/charred-corn-salad-with-white-beans/
this looks fantastic! we eat tofu. and with all the food prices going up its still relatively inexpensive
Tofu is the BEST - I love it and use it a lot. Depending how you cook it, and what spices you use, it can become anything. LOL Not sure I can get that spice here in Sweden, but I think I'm gonna try that recipe you shared, I'll just try and wing the spices.
the seasoned salt is definitely an old school american ingredient. you can taste the paprika, onion powder, garlic powder. i think you'll be able to make a substitution. and yes, tofu by itself is tasteless and absorbs all of the stuff you put on it and its lite and full of protein.
Eva already mentioned Rainbow Plant Life, my favorite place to get recipes right now, but I'll share a specific one. I made the creamy lentils from this recipe for my thanksgiving feast, along with the tahini sauce. I didn't put it in butternut squash though, because I had a sweet potato and I just roasted that instead. With the leftover lentils, I added veggie broth and it became soup! https://rainbowplantlife.com/creamy-lentil-stuffed-butternut-squash/ Here it is on my thanksgiving feast plate. I also enjoyed the mushroom stuffing, but that's not really light. https://rainbowplantlife.com/vegan-thanksgiving-mushroom-stuffing/
I have saved all of these recipes! I love trying new things. I've never made tofu but I might try...that looks good! We discovered this summer that we love dishes with chicken and pineapple. This was a fave and I've made it several times. I also make this Mexican Zucchini recipe A LOT and serve rice with it. I know I have many more but I'd have to get my recipe books out...and they are in my kitchen and I don't want to get up. LOL!
Here's a one pan dinner with chicken, cheese and broccoli. Cheesy Cauliflower Rice with Broccoli and Chicken | Living Chirpy
These look great! I’m dodging the popups left and right lol, the Mexican zucchini looks right up our alley
@tanteva i made the spicy garlic tofu last night it was so good! I took the time to really drain the water out so it browned up when I cooked it. My husband and daughter loved it. My husband went back and there were no leftovers. 5 stars!
Ok, I haven't tried this yet, but it's on my plan for Sunday. Looks like a perfect recipe for leftovers! https://thecleaneatingcouple.com/primavera-pasta/
