Has anyone ever tried making their own homemade extracts for cooking? I just started a lavender extract this morning that they said would be done in 1 month. It's basically vodka and culinary dried lavender flowers. We'll see how it turns out!

A friend makes her own vanilla kinds. She gives them out as gifts. I use it all up, lol!

I don't, but I'm really good at using it! :giggle

I don't, but that's interesting that it takes that long to infuse!

I am WAY too lazy to make my own, but I think that's really cool that you do! :)

I don't have that much patience. I tried doing a vodka drink that you have to infuse for a month. I gave up!

It is AMAZING. Forgot to add...you need to slightly agitate it once a day. I def. don't have patience for that!

For cooking fresh herb infused oils, - with varying success, but mostly they might taste good to begin with, but they can get bitter if you don't use them fast enough after you open them.
My mum used to make her own vanilla "sugar" for baking . In Denmark in December a lot of christmas/newyears recipes contain real vanilla seeds, not always the pods. End of the month ( I have no idea if she dried a bit them first, but I don't think so) she would cut whatever she had in pieces put them in a small jar a d cover with sugar. The sugar would infuse with the most amazing flavour, and she would use a teaspoon of it in her cakes or sweet compots.....yum.....
