    I had a spinach salad with chicken, avocado, sour cream and loads of authentic salsa... everyone else had chicken and mashed potatoes...

    I'm baking chicken thighs in a mixture of cream of mushroom soup and half n half. I'm going to throw in some tarragon, paprika and, of course, garlic. I'll serve it over rice and with steamed asparagus.

    Umm, we had frozen pizza tonight. Well, I mean, I did cook it, I didn't SERVE it frozen LOL. Go me.

    I threw a BBQ pork loin in the crockpot at lunch. Add cheesy broccoli rice and steamed broccoli, and I'm set

    i made some egg stuff...

    like this..
    -pork sausage
    -onion
    -red pepper
    -frozen spinach

    layer all in baking dish

    -eggs
    -milk
    -spices

    pour over the rest

    bake 30-35 min.

    I just got home from work.. so I tossed together a greek salad... I'm on my second serving... ( sorry for the garlic breath...lol)

    Wow. Some of your dinners sound delish!!

    We had stew with bacon and onions in it. I am stuffed.

    We had left overs tonight...but they were really good! I had made these really neat shaped pastas with meat sauce on Monday night.

    I'd had such a long day (worked over an hour late, far home and from where I usually work, the drive home was in gross traffic that I'm not used to, then, hubby and I went to a meeting about our son...long story, long day) I so need :wine right now!!

    we ended up w/ spaghetti. nothing magically...but then it was snowing pretty hard and i couldn't go out.

    Hubby was working late last night so I just picked up a premade lasange and threw that in the oven. And tonight is hamburger night. I love fridays cause we always have hamburgers. I don't have to think of anything, the kids will actually eat and it's easy.

    This is a great thread though. I am always at a loss for what to make for dinner.

    Yum. I love food talk. HAHAHA

    I made a spinach and potato frittata along with turkey bacon and blueberry muffins (bfast for dinner here too LOL). The frittata was good - not great, it needed something. Healthy & filling though :)
