Canadians - Nanaimo Bars

    I plan to make some Nanaimo Bars this week for my son's preschool but I can't find my recipe. Can you direct me to your best recipe? Thank you! :flirty

    We have friends who are Canadian and gave me this recipe. I've never made them, because I wasn't able to find vanilla custard powder locally. BUT ... I'm motivated to find it and make these now!

    Nanaimo Bars

    1/2 cup butter
    1/4 cup white sugar
    5 T. unsweetened cocoa powder
    1 egg
    1 tsp vanilla
    2 c. graham cracker crumbs
    1 cup shredded coconut
    1/2 cup chopped walnuts
    1/4 cup butter
    2 c. powdered sugar
    2 T. vanilla custard powder
    3 T. milk
    4 squares (1 oz) semi sweet chocolate, chopped
    1 T. butter

    Mix 1/2 cup butter, white sugar, cocoa, egg and vanilla in a heavy saucepan or heavy boiler. Stir over low heat until it reaches a custard-like consistency.
    Combine graham crackers, coconut and walnuts and add to melted mixture. Mix well and pack into buttered 9" square cake pan.
    Cream 1/4 cup butter, powdered sugar, vanilla, custard powder and milk. Beat until creamy and spread over base. Refrigerate until hardened.
    Melt semi-sweet chocolate with 1 T. butter and drizzle over custard. Refrigerate and cut into bars when totally hardened.

    As far as custard powder goes you can often find it in British or Irish import stores (also larger supermarkets sometimes have a British import section so maybe check there as well). Bird's is the only brand I've ever seen. I've read that some people use cornstartch as a substitute but I have no idea how well that would work.

    Thank you ladies. Julie - you can substitute vanilla pudding powder for the custard. :)
