Hot dogs and burger on the BBQ with deli potato salad and green salad. I am not cooking anything in the house this wk during this crazy heat wave. BBQ and microwave only. I don't eat sandwiches. It's too hot to do much prep work. Any other ideas? Poor Taz is even too hot....sleeping lots these last few days. I'm such a wimp....can't stand this 90+ weather
We stay away from the BBQ - not making john stand out there when it's 108. So it's dinner as usual for us since I can cook in an air conditioned house
pasta salad.. Cheese and meats? with crackers crab sticks and cheese home-made sub sandwhiches wraps?
Sandwiches...chicken salad, egg salad, BLT, etc. Lots of salads (fruit salad & pasta salad) and loads of fruit.
I've never made quesadillas on the grill, but I'm sure you could. They don't take long to make on the stovetop, either. We go way simple and do chicken, cheese, and tomatoes (hubby can't eat them since he's GF or he'd require them to be more complicated), but if we were fancy or I was cooking them for someone besides my 4yo, I'd do other veggies and use sour cream & salsa for dips.
u could also get a roasted chicken at the store and then use it to make sandwiches, put on salads, etc
Great ideas, ladies...thx. I think I'll force myself to get in the hot car later and drive over to the store and stock up on a few deli salads, a cooked chicken along with hotdogs and burgers. I'll grab a few salad mixes and some fruit. I might try a corn tortilla quesadilla on the BBQ with the cooked deli chicken, peppers, mushrooms and cheese. I've never tried them on the BBQ before and I have some tortillas in the fridge.
we do a whole lotta burgers and hotdogs and then put in baggie for fridge, and then... I make up hamb with cheese, ket/mustard and wrap in foil, individually...they go on the dash of our van...and after an hour! Warm and yummy...my kids love it! lol I do hotdogs, pancakes and anything without mayo!
Oh Anne....that just makes me laugh....I am picturing a row of tinfoil burgers sitting up in the window! I do have a crockpot but just can't seem to get the energy to think of what to put in it. The heat just makes my brain shut down. I should google dump recipes (I think that's what they are called...where you just dump everything in and cook in the crockpot).
I'm going to make a list and venture out later. I think I'll open up the car windows about 20 minutes before I go. The inside of my car will be boiling hot and by the time the AC kicks in I'll be at the store so hopefully just opening up windows will let some of that heat out before I get in. I've got four days of dinners and lunches to figure out and I've got some good ideas now. I'm driving my hubs crazy b/c I don't even want dinner til after 8:00 at night when it cools down (just barely). Just wait....next wk I'll be complaining of the rain LOL.
Kristin - yep, that's on my list. Deli chicken for pasta GF salad, to add to a large green salad and shredded for BBQ quesadillas.
Grab a pork roast for the crock pock. After it cooks enough to shred, I drain, and add a bottle of BBQ sauce and shrewd it up with a knife and fork. We throw it on rolls and eat with chips, salad, or fruit. So easy and low fuss. You can also do it with chicken if you prefer chicken BBQ. My kids love it!
