What's For Dinner?

    I am in a rut and need something simple and fairly healthy to make for dinner tonight. Heading to the grocery at 3 pm so no crock pot today....what have you made lately that just rocks your socks?

    we are jalepeno popper lovers...but the time to do them gets on my nerves...so I did a skillet
    jalapeno popper with vegis and meat
    dice 1/2 package of bacon and brown in large skillet
    cut up vegi's left overs
    I use yellow squash, green peppers, mushrooms what ever I have
    and put in with the cooked bacon, to brown.
    Cook meat of choice. I have used hamburger and chopped steak. I also used left over chicken shredded (can omit recooking and add to simmering pan)
    then the best
    cut up 10 to 15 jalapenos. (I wear gloves).
    Add to the bubbling yummy on stove.
    once all is cooked put in
    ONE half package of cream cheese...and let it melt thru the yumminess
    I serve over rice for the CarB eaters, and a bit of shredded cheese on top.
    PURE wonderful.

    but if that sounds too much for after shopping,
    Boneless Chicken Breast split so they are not to thick
    1/2 cup may and 1/2 cup parmesan cheese.
    some garlic and seasoning.
    spread on chicken - cook for 30 minutes at 375 or until brown and done.
    serve with egg noodles or fettuccine and yummy with spinach!

    another quick one here is
    potato bar. I have an insta pot, so can do pots in 5 minutes..but bake a bunch, and have all the fun toppings
    great fun

    and if worse comes to worse
    get a pizza at the store, eat and get all those groceries put away and plan for tomorrow! bhhaha

    Chicken Stir Fry.
    1lb of chicken cut really thin
    Portabella or Shitake Mushrooms
    Green bell peppers
    asparagus
    (any other veggies)
    Udon noodles or rice noodles
    Tamari sauce (soy sauce w/o gluten) or Coconut Aminos or Soy sauce
    Minced garlic.
    WOK or skillet
    olive oil, sesame oil, etc.

    Warm up your skillet add oil (just a bit) and garlic. As soon as it starts changing color, then add chicken. (No need to season the chicken). Cook chicken and then pull chicken in a plate, add a bit more garlic and your veggies. Cook your noodles in a pot following the package instructions. After veggies are done, add chicken and noodles and soy sauce to taste. done.

    You can add shrimp to this recipe to the chicken! If you are a nutty kind of family, you can add a bit or peanut or almond butter! Oh and a bit of grated fresh ginger!!!!!

    I've been baking chicken (thighs or breasts with skin on, bone in). So simple, just rub with olive oil, sprinkle heavily with spice (I've got a locally made Jamaican spice that is awesome) and salt & pepper. Bake at 350 for one hour or so. So tasty and easy to do. Add in chunked potatoes about 15 minutes later, then chopped veggies (peppers, cauliflower, broccoli, onion, asparagus, sliced radishes, beans) about 5-10 later. Toss the potatoes/veggies in a bit of olive oil and spice before laying on baking pan.

    I made a quick dinner of baked ribs last night. Maybe not healthy, but all things in moderation. I just threw the ribs in the baking dish with pepper & garlic salt. I pour half a bottle & sweet & spicy bbq sauce over the ribs & bake at 425. When they're just about done, I turn them & pour the rest of the sauce. Instant mashed potatoes & corn niblets for the win! I have an instant pot too & ribs are delicious & fast in that thing.

    It's not tonight's dinner but a family favorite. We've made chicken fajitas in the crock pot and I recently tried it as a one pan recipe. Found these directions on Pinterest. I used taco seasoning as a substitute for the spices in the recipe.

    We had chicken breasts, I have an awesome herby rub that i rub into them, fried in butter and coconut oil with mashed pumpkin& sweet potato mash and green beans. the whole family loves it so it's a winner!

    I didn't see this until late, but we're having hamburger stroganoff.

    Brown 1 lb of ground beef with garlic salt and onion and a pat of butter.

    While that is cooking, cook your fave rice.

    After the beef is browned, add in one family size can of Cream of Mushroom Soup along with one can of water. Stir and heat until bubbly. Remove from heat and add in 8-12 oz of sour cream (depending on how sour creamy you like it).

    Serve over the cooked rice with a side veggie or salad.

    This is one of my family's favorites. I use lemon pepper on the chicken and Italian seasoning on the rest. It's so yummy!!

    That looks amazing!! I am so going to try that!

    I'm saving all these recipes. I can't wait to be able to cook again. We have lived on take out and Ramen for weeks. When baseball is over and school is out, I'm giving some of these a try.
