Potluck | Pad Patter 5.23

The couple potlucks I've done, I took homemade baked mac n cheese (way more trouble than it's worth IMO) and frozen mini corn dogs :giggle

I'd definitely opt for something easy like brownies, cookies, or cupcakes next time...homemade or store-bought. :)
My work wife grabbed mac & cheese before I could, but I agree about it being more trouble than it's worth because it has to be such a large amount.
Brownies are a great idea!!
 
@IntenseMagic With the meat you've described, I would bring baked beans.

My recipe is just thrown together - meaning I don't do any measurements. It's inexpensive but makes a ton, and there is usually nothing to bring home. You can throw it together quickly. The longest part is baking it until the liquid thickens. I usually have it on 350 for about 45 minutes to an hour.

I use canned pork and beans (two large or extra large cans) and add 2 cups of dark brown sugar (sometimes more and sometimes less depending on the amount of beans - I just make sure that the bean juice turns very dark), along with worcestershire, yellow mustard, dried minced onion, soy sauce, and a very small teaspoon of Dale's (sometimes I omit the Dale's).

Oooh those stuffed tomatoes sound really yummy! Are they very time consuming? I need to be able to do it the night before, after work :)
No they aren’t.. the tomatoes are cocktail tomatoes so they are larger than a cherry tomatoe but smaller than a plum tomatoe.. we made a garlic cream cheese type of mixture which is like the alouette or Boursin garlic & herb mixture.. slice off a sliver at the top of the tomato, core out the inside and put the garlic cream cheese mixture inside .. top it off with a sprinkle of bacon bits.. easy :)

Ooh coleslaw!! That's one I hadn't thought of! The salad sounds really good, too!
Cole slaw is easy.. you can even buy it from Walmart put it in your own bowl and sprinkle a dash of paprika on the top to make it look homemade!
 
Nothing to add but my mouth is watering reading through this thread.

I was always the one to sign up for buns or chips or anything like that that I could just grab at the grocery. The potlucks sort of went away at work after the payroll clerk left in 2007 since she was the one that always organized them. But when we did have any after that for retirement parties, I was the photographer. I took pictures and gave them to HR and got to eat anyways.
 
My go to potluck dish is called bean bake. It's baked bean, kidney beans, butter beans, ground beef (I use turkey), bacon, LOTS of sugar ( :giggle ), ketchup, mustard, little vinegar and than it's baked. I've learned that in a pinch I can make it the day before, throw it in a covered dish and nuke it for 15 minutes and it's ready to go in a hurry. I love that! It's always a huge hit! Let me know if you want the recipe. I pretty much know it by heart because I get asked for the recipe every single time I take it somewhere new. I always say I happy to share the recipe, but the rule is you can't bring it to a potluck that I'm coming to because it's MY go to dish. Lol!

I was just talking to my hubby about this dish and didn't know what it was called but we had it at a get together a while ago and it was so good!!! I could totally use this recipe please & thank you @Karen because I have been craving it!! lol

CREAMY GRAPE SALAD
1 Package (8oz) Cream Cheese (softened)
1 Cup Sour Cream
⅓ Cup Sugar
2 tsp Vanilla Extract
2 pounds seedless red grapes
2 pounds seedless green grapes
3 tbsp Brown Sugar (optional to sprinkle on top)
3 tbsp Chopped Pecans (optional to sprinkle on top)
In a large bowl, beat the cream cheese, sour cream, sugar and vanilla together. Add the grapes and toss to coat. Transfer to the serving bowl, cover and refrigerate until ready to serve. Sprinkle on optional brown sugar and chopped pecans when ready to serve.

(I drain the juice off all three cans)

1 lb ground burger (I usually use turkey for less fat)
1 onion chopped (I use about 1/4 cup of dried minced onion in a about 1/2 cup water, nuke for one minute)
12-16 slices of bacon in small pieces (I use one box of precooked bacon by the deli meats)

(brown meats and onions together)

1/2 cup sugar
3/4 cup brown sugar
1/2 cup ketchup
1 tsp salt
1 tsp vinegar
2 tsp mustard

Mix everything together and then cook at 375° F for one hour. In a pinch 15-20 in the microwave works too.

And I even found a recipe card that I made for this. :giggle

You are very welcome. I forgot to add when I don't have pecans around I substitute for some other type of crunch topping. The last time I made it I had a bag of mini butterfingers and crushed them up as the topping. Super yum!!!

Thanks ❤️❤️ , this looks simple and yummy. I have not been to a potluck in 20 years but we used to go to them all the time with the dozens of sports the kids were in. The card is fun too!
