JOURNALING:
Rum Raisin Rice Pudding
2 C half and half
2 C milk
1 Tbl butter
1/2 C sugar
1 1/2 C Arborio rice
1/4 tsp cinnamon
1/4 tsp vanilla
1 C raisins
1/2 C dark rum
Place all ingredients except raisins and rum into pressure cooker. Stir well. Lock lid in place. Pressure cook on high for 12 minutes. While rice is cooking, combine raisins and rum in small saucepan and bring to a boil. Simmer for a couple of minutes and then remove from heat. Reduce pressure with quick-release method and remove lid. Stir in rum and raisins. Serve warm. 6-8 servings
