Journaling: Everything in my life that has to do with food has recently been flipped upside down! Almost two years ago, I learned I have a gluten sensitivity and that was the first of two major food changes I would have to make. Going gluten free was difficult for so many reasons, the cost, the product availability in a small town, and starting over with a whole new cook book. In hindsight, this was nothing compared to what I'm doing now. In June, I was diagnosed with an additional condition and that meant eliminating all yeast, all sugar (yes, even fruit), all vinegar, and various other foods from my diet. Of the two major changes, this was definitely the harder. It's been five months since and without the internet I don't know what I would have done. I shop for safe food products online, find recipes on pinterest or other websites, and find support from others who've been there. Thankfully, I can still enjoy some favorite recipes, one of which is pictured above. Roasted vegetables are so yummy and now that I've quit sugar, the carrots taste even better! In a culture filled with sweet coffees, sodas, baked goods, and candy it's not easy to have to eat this way. I know the holidays will be a challenge but I plan to meet that challenge head on and find recipes I like that are still safe so that I can truly enjoy them without awful side effects. So, my food world may have been flipped upside down but thankfully I have adjusted and still find foods I can enjoy.

I love how you have the journaling tilted the same way as your pp and pix :) wonderful journaling..wish i could journal like that :)
 
THis is wonderful. What a difficult change to adjust to, (twice!), and your journaling about this is a wonderful way to remember the transition. I think the tilt template is just perfect for this, and you've really made the template your own. Beautiful!

Love the colours and design of your LO, esp love how the design fits your title so well. Great journaling & so sorry you're having to make these adjustments but how wonderful you're remaining so positive. Awesome job - both the LO and how're you're dealing with it :)
