The delightful cool days of fall are all but gone in my neck of the woods. I find myself hunkering down in the house and cooking as the colder weather settles in. Normally its soups and other belly warming food that I like to cook. But as we approach Thanksgiving here in the USA there is one recipe that I enjoy making above all others. I received the recipe for pumpkin creme pies from a friend many years ago. Since that very first time I made them my husband and children have requested these cookies every year around this time. Unfortunately I have never been able to snap a picture of these delicious goodies because they are usually gone in a flash! But trust me you want to try these delicious twist on oatmeal creme pies.
Pumpkin Creme Pies
Ingredients
For Creme Pies
- 1 cup brown sugar
- 1 cup sugar
- 1 cup vegetable oil
- 15 oz pumpkin purree
- 2 eggs
- 1 teaspoon vanilla extract
- 3 cups flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 tablesppon cinnamon
- 1 teaspoon ground giner
- 1/2 teaspoon salt
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
For Filling
- 1 package cream cheese softened (8oz)
- 1 stick unsalted butter, softened
- 1 package powdered sugar (16 oz)
- 3 drops vanilla extract
- 2 dashes cinnamon
Preparation Instructions:
Preheat oven to 350 degrees.
Creme Pies: Beat together brown sugar, sugar, oil and pumpkin. Add eggs one at a time, mixing well after each addition. Add vanilla. Mix well. In a separate bowl, mix together the dry ingredients. Slowly incorporate the dry ingredients into the wet until just combined. Line a baking sheet with parchment paper. Using a pastry bag with a round tip, or a big zip lock bag with one corner snipped, squeeze out circles of batter, starting from the middle and working outward until the circles are about 2 inches in diameter. Bake for 11 minutes. Cool on wire rack.
Cream Cheese Filling: Beta together cream cheese and butter. Add powdered sugar, vanilla and cinnamon. Frost the flat side of half the pies and top with another pie piece.
Enjoy immediately, or chill overnight. These keep in the fridge for a few days.
