Greetings, Happy Scrappers!!
Polly Liana here with a delicious recipe for cookies that remind me of my days back in my hometown of Honolulu Hawai’i. We used to go to Chinese food every Tuesday and we’d always almond cookies with our food. They’re melt in your mouth delicious and totally addictive. Since it’s the season for cookies, I thought I’d share it with you. (They’re also festive, with the red dots). Here’s the recipe:
2 1/2 cups all purpose flour
1 cup sugar
1 egg
2 tsp artificial almond extract
1 cup + 3 tbsp Crisco
1/2 tsp salt
1/2 tsp baking soda
Red food coloring
Preheat oven to 350 degrees. In a large mixing bowl, mix Crisco and sugar. Add egg and almond extract and mix.
In a separate bowl, sift flour, salt and baking soda. Pour dry into wet and mix.
Scoop a rounded teaspoon of dough and roll into a ball. Place on parchment paper and press down slightly. Use the thick base of a chopstick, dipped in red food coloring to make a small dot in the middle.
Bake for 16 minutes.
Give them a try! They’re a unique, delicious alternative to the traditional Christmas cookie.
