I couldn’t resist the temptation to share one of my favorite biscuit recipes with you today! It’s “blue”berry biscuits in honor of the 4th of July and our red, white and blue colors!
I’m a Southern girl at heart, so a good biscuit is one of my favorites for breakfast, especially when there’s some honey nearby to drizzle on top! I recently visited with a family from Oman and they gifted me some fresh honey from their honey farm at home. I immediately began making plans for biscuits to accompany this delicious honey and these are the biscuits I made.
This is a fairly simple recipe, made with ingredients that you probably have on hand.
Ingredients:
2 cups self-rising flour
1/2 c. sugar, divided
1/2 c. butter flavored shortening
2 1/2 c. blueberries
1 1/4 c. buttermilk
extra sugar for sprinkling
Directions:
Preheat your oven to 425 degrees. Line a baking sheet with parchment paper and set aside.
Stir flour and sugar together in a large bowl. Cut in shortening until coarse crumbles form. Gently fold in blueberries. Stir in buttermilk until a thick, sticky dough forms.
Drop heaping scoops of dough on the prepared baking sheet and sprinkle each biscuit with a pinch of sugar.
Bake 25-30 minutes or until golden brown.
Let cool 10 minutes before drizzling with honey and eating. Or transfer to wire rack to cool completely.
